12-16 Medium shrimp (Shell Removed)
2 Tablespoons of Coconut Oil
2 Garlic Gloves
5 Slices of Ginger
Salt + Pepper
Organic Curry Mix Seasoning (or Turmeric and Cumin and any other Indian spices you like to play around with)
Organic Spring Mix
1/4 of a Red onion (Sliced)
1 Mini Cucumber
Honey Vinaigrette Dressing
Step 0 – Salad – Prep! (whaaat!)
Before cooking the shrimp I like to set up my greens. All I did was pick three vegetables: some organic spring mix, a quarter of a red onion (sliced), and one mini cucumber sliced into pieces. I just set this aside with some home-made organic olive oil – honey vinaigrette (Check out the recipe HERE). Getting in your raw vegetables is imperative in clearing your skin. Raw foods with clean out your digestive tract and supply your body with micronutrients, vitamins, and minerals most bodies are craving for. EMBRACE THE GREENS!
Step 1: Chop Garlic and Ginger
I smashed the garlic gloves with the butt end of the knife with my palm so the garlic peel split right off the clove. This makes it a LOT easier to remove the skin. Chop the garlic horizontally and vertically into small pieces. Next, take your ginger and cut 5 even slices. Then chop the ginger vertically so you are left with even slices.
Step 2: Cook Garlic and Ginger
Place a pan on a burner and set it on medium- high heat. Once the pan starts getting hot add 1 tablespoon of coconut oil. Add sliced ginger and garlic. Cook for about 1 minute or until the herbs get a light brown. The aroma will knock your socks off and will kick start your digestive juices!
Step 3: Add Shrimp and season
Now you can add your shrimp. Season with salt, pepper, and your curry mix. Shrimp cooks fast so don’t go rush to your phone to see if your hot date text you back. Stay focused because we are going to turn them over soon 😉 Let shrimp cook for about 3-4 minutes. Wait until the bottom of the shrimp turn a whiteish pink. Once the shrimp show color flip them over to the other side. Proceed to the next step
Step 4: Marinate with tangerine
At this point in time you can peel one tangerine. take the juices of each individual tangerine piece and squeeze the juices in a circular motion into the pan. Be a chef. Do it with flare 😉 After you squeeze the whole tangerine in the pan put on a lid and simmer the heat onto low. Allow the juices of the tangerine cook slightly and simmer with the shrimp. You are almost done 🙂
Step 5: Plate
Take your delicious shrimp that your neighbors are begging for and plate it on your greens. Feel free to serve the shrimp with a side of fluffy white rice (Which can easily be made HERE) and top it off with that delicious homemade honey vinaigrette you made. For a bit of extra nutrients ravish your plate with some chopped parsley. Just like that you made your own traditional whole food meal 🙂
